Ingredients

1.5 lb. salmon filet

2 lemons

3 tbs. Capers

3 tbs. Olive oil

Salt

Pepper

 

 

 

This is a simple summer recipe that’s light and quick to make.

Place the filet in a shallow baking dish and rub with the olive oil, salt, and pepper. Squeeze the juice of one lemon over the filet and let sit for about a half hour in the fridge. After, cut the filet into 5 equal portions and wrap each individual portion in aluminum foil so there is still about a quarter-sized opening at the top. This opening will allow the moisture to escape. Divide the capers equally among the portions and pour into the opening of the foil.

 

Place the foil wrapped salmon in a grill or oven at 400 degrees for about 20 minutes until the fish is flaky. Garnish with sliced lemon.
