1 cup cake flour- ½ cup agave nectar
- 1 ¾ cup egg whites
- ½ tsp. salt
- ½ tsp. stevia powder
- 1 tsp. cream of tartar
- 1 tsp. vanilla extract
- ½ cup blueberries
Angel food cake is one of the healthier cakes out there (if there can be one) because of the minimal amount of flour used and the abundance of egg whites in the batter. Agave nectar is also a great substitute for sugar because it has a low glycemic index level that keeps blood sugar levels low. This cake is easy to make with ingredients that are better for you than traditional cake ingredients. Satisfy your sweet tooth with something you don’t have to feel that guilty about.
To start, preheat the oven to 325 degrees. Beat the egg whites with an electric mixer at high speed until they form a bit of a soft peak. Add the salt and cream of tartar and beat the egg mixture until the peaks stand. After this, beat in the agave and vanilla slowly until the mixture forms soft peaks again. Sift the cake flour and stevia into the mixture and gently fold. Gently mix the blueberries in.
Spoon the mix into an ungreased angel food cake pan and bake for about 40 minutes. To check if the cake is done, insert a toothpick into the middle to see if it comes out clean. After the cake is done baking, invert the cake and let it cool for 2 hours. After, take the cake and add some strawberries and cool whip for extra flavor and flare.
